Featured Recipe Vegetable Callaloo Soup

1 lb Callaloo
12 cups water 1 medium-sized onion, chopped 2 Cloves garlic
1 Medium carrot
1 Medium cho-cho
1/3 skin of a scotch bonnet pepper finely chopped 1 Can of coconut milk 1/2 lb Yellow Yam (peeled)
1 Stalk scallion
1⁄2 Teaspoon salt
1⁄2 Teaspoon black pepper
Chop scallion, onion, and garlic. Dice and blanch carrot and cho-cho. Wash the callaloo then chop finely. Boil in water with salt. Add the coconut milk, yam, okras, scallion, garlic, carrot, cho-cho, scotch bonnet pepper and black pepper. Add water if necessary. Simmer for 30 minutes. Soup should be thick in consistency.
